How do you take your morning coffee?
Nothing accents the day like a great espresso.
Do you have a guilty pleasure?
(food related please!)
I love sweets, chocolate, caramel, fruit, you name it. Also, cookies, pies, and soufflés– but everybody knows about that.
What’s your perfect meal?
My favorite dishes to prepare are fresh vegetables from the Sunday Farmer’s Market, roasted or grilled free-range chicken, pasta or pizza with white truffles.
What’s your worst kitchen disaster?
We’ve had a few disasters, but the customers never knew about it. It’s how you handle a problem which separates the boys from the men.
Your favorite kitchen gadget?
I have very few gadgets in my kitchen – the one tool I use is my Wolfgang Puck Grill / Griddle which I use not only for breakfast, lunch and dinner at home, but also at the restaurant and for catering.
You wouldn’t be caught dead eating. . .

Most memorable meal?
My five favorite restaurants in the world are The Fat Duck, L’Oustau de Baumanière restaurant in Les Baux in the south of France, Le Louis XV in Monaco, Steiereck in Vienna and Matsuhisa and Spago in Los Angeles.
What’s your favorite spice?
When I started Chinois many years ago, my secret weapon was a blend of ginger, garlic and green onions finely chopped into a paste and I would add it to almost every dish.
Midnight snack of choice?
The best place for a snack is my house—I’ll make a pizza with some freshly grated Parmesan and basil leaves.
What’s your food Mantra?
