Spilt Milk: The Naptime Chef


Kelsey Banfield got her introduction to food from the best home cooks in the world, her parents. Now she keeps the tradition alive with The Naptime Chef.
How do you take your morning coffee?
I don’t drink coffee, I’ve never learned to like it. I love my tea black in the morning, and with milk and sugar in the afternoon.
Do you have a guilty pleasure?
Ruffles Sour Cream & Onion Potato Chips
What’s your perfect meal?
This is a next to impossible question! A gorgeous green-hued salad, preferably with lots of arugula. Ricotta Gnocchi, Perfect Roast Chicken, and perfectly crisp haricot vert with a meyer lemon dressing. For dessert: profiteroles and a cheese plate. Oh, and don’t forget the great wine!
What’s your worst kitchen disaster?
There have been quite a few, but melting the tea pot to my Mom’s electric burner coil was among the worst.
What’s the cooking skill you lack?
I’m not great at grilling, my husband does it more than I do. I tend to overcook everything on the grill.
Your favorite kitchen gadget?
My KitchenAid mixer!
You wouldn’t be caught dead eating. . .
Those gigantic restaurant meals where you get an award if you can finish something absurd, like a 40 pound steak. Ugh.
Most memorable meal?
Our wedding menu! Green Salad with Candied Nuts & Blue Cheese, Butternut Squash Tortellini, Butter Poached Lobster Tail, Grand Marnier-Soaked Cake with Chocolate Ganache. All fresh and perfectly prepared.
What’s your favorite spice?
Cinnamon
Midnight snack of choice?
Nutella.
What’s your food Mantra?
Everything in moderation. Keep the food real and have fun with it.
